We are currently seeking a skilled and experienced full-time Sushi Chef to join our culinary team at Nobu Hotel and Restaurant, Toronto. In this key role, you will be responsible for the preparation, assembly, and presentation of sushi and sashimi dishes, ensuring the highest standards of quality, flavour, and presentation. Responsibilities: Prepare and assemble a variety of sushi and sashimi dishes, including nigiri, maki rolls, and specialty rolls, according to Nobu's recipes and standards. Ensure the highest standards of quality, freshness, and flavour in all sushi preparations, using the freshest seafood, vegetables, and other ingredients available. Coordinate with the sushi team to prioritize orders, expedite service, and maintain efficient flow and timing during busy service periods. Maintain cleanliness, organization, and sanitation in the sushi bar area, including workstations, equipment, utensils, and storage areas, in accordance with health and safety regulations. Monitor inventory levels, track usage, and assist with ordering and receiving of seafood and other ingredients to ensure availability and freshness. Train and mentor junior sushi chefs, sushi apprentices, and kitchen assistants in sushi preparation techniques, knife skills, and food safety procedures. Collaborate with other members of the culinary team, including sous chefs, line cooks, and pastry chefs, to ensure smooth and efficient operation of the kitchen and timely delivery of orders. Qualifications: Previous experience as a sushi chef in a fine-dining restaurant or sushi bar environment, with a strong foundation in sushi preparation techniques, knife skills, and sushi bar operations. Extensive knowledge of seafood varieties, sushi rice preparation, and traditional and contemporary sushi styles. Ability to work efficiently and effectively in a fast-paced kitchen environment, with strong organizational and time management skills. Excellent communication and teamwork abilities, with the ability to collaborate effectively with other members of the culinary team. Flexibility to work evenings, weekends, and holidays as required.
