Position: Head Chef Location: Noyaa, Toronto Job Type: Full-Time Job Overview: We are looking for an experienced and visionary Head Chef with in-depth expertise in, Nikkei and Mediterranean Cuisine. The ideal candidate will be responsible for overseeing all kitchen operations, ensuring the quality of food preparation, driving culinary innovation, managing the culinary team, and maintaining high standards of hygiene and safety. The Head Chef will work closely with the management team to uphold the restaurant’s reputation for excellence and to craft unique dining experiences that blend the best of, Nikkei and Mediterranean culinary traditions Key Responsibilities: Menu Creation and Development: Design and develop creative, seasonal menus inspired by Nikkei, Asian, Japanese, and Mediterranean culinary traditions. Regularly update the menu to reflect current food trends, seasonal ingredients, and customer preferences. Collaborate with the management team to curate special events, tastings, or promotions that highlight diverse flavors. Kitchen Leadership: Lead, supervise, and motivate a team of chefs and kitchen staff to ensure smooth and efficient kitchen operations. Train and develop kitchen staff in cooking techniques, food preparation, and safety standards specific to Nikkei, Asian, Japanese, and Mediterranean cuisines. Ensure that all dishes are prepared and presented according to the highest quality standards and within the required time frame. Food Preparation and Cooking: Oversee daily food preparation, ensuring all ingredients are fresh and meet quality standards. Expertly execute cooking techniques and methods that are specific to Nikkei and Mediterranean Cuisine. Inventory and Cost Control: Manage inventory levels of food and supplies, ensuring cost-effective purchasing and minimal waste. Monitor food costs and maintain budgets while ensuring the quality and authenticity of the dishes. Maintain detailed records of inventory, ordering, and supplier relationships. Food Safety and Cleanliness: Ensure compliance with health and safety regulations, including proper food handling, storage, and sanitation practices. Oversee daily kitchen cleaning routines and maintain a safe, clean working environment. Collaboration with Front-of-House Team: Work closely with the restaurant management and front-of-house staff to ensure seamless service and customer satisfaction. Assist in food and beverage pairings, ensuring that the menu items complement the restaurant's overall dining experience. Customer Engagement: Occasionally engage with customers, particularly in fine dining settings, to gather feedback and ensure a high level of customer satisfaction. Incorporate customer preferences and suggestions into menu adjustments when possible. Requirements: Experience: Minimum 5-7 years of culinary experience, including at previous positions as Sous-Chef specifically in Nikkei kitchens. Proven track record of managing kitchen operations in high-pressure environments. Culinary Knowledge: Extensive knowledge of Asian, Japanese, Nikkei and Mediterranean culinary techniques, ingredients, and flavors. Experience with traditional cooking methods such as sushi rolling, grilling, stir-frying, and Mediterranean roasting. Leadership and Communication Skills: Strong leadership abilities, with a focus on team development, motivation, and conflict resolution. Excellent communication skills and the ability to work collaboratively with both kitchen and front-of-house teams. Creativity and Innovation: Ability to create new and exciting dishes while respecting the authenticity of the cuisines.
